Hood Famous Cafe + Bar to expand hours and begin evening service

Chinatown-International District’s Hood Famous Cafe + Bar launches bar program featuring cocktails, dessert pairings and small savory plates

 
 
 

SEATTLE, WA--On Tuesday, October 22nd, Hood Famous Cafe + Bar (HFC+B) will extend its hours and soft-launch its bar program and evening menu.

Since its grand opening in the historic Publix building in March 2019, HFC+B has become an exciting addition to Chinatown-International District’s vibrant restaurant scene, and is currently the neighborhood’s only Filipino restaurant. HFC+B’s cafe-by-day, bar-by-night “coffee-to-cocktails” concept initially opened with daytime hours and a “meryenda” (Tagalog: snacks/desserts) menu featuring desserts (including the flagship Ube Cheesecake), cafe fare and specialty coffee. Now, HFC+B is set to add evening service with a full beer, wine, and spirits program.

The bar’s drink menu features cocktails highlighting Philippine and Asia-Pacific flavors curated to pair with Hood Famous desserts, such as the Pandan Oaxaca old fashioned (mezcal, tequila, house pandan syrup, mole & orange bitters), a great pairing with Buko pie. Or, drinks may be taken as boozy desserts on their own, such as the Buko alexander (coconut-washed brandy, creme de cacao, cream, toasted coconut) or Spiked taho (silken tofu, tapioca & brown sugar rum syrup). The Fernet negroni, made with Philippine gin, is a great option for diners who have finished a nearby meal and are looking for an after-dinner drink. The daytime coffee program (in partnership with Fulcrum Coffee roasters and featuring Kalsada Coffee from the Philippines) will also be integrated into the evening menu (Kalsada cold brew martini). Non-alcoholic mocktails will also be available (Calamansi & dragonfruit shrub soda, Ampalaya shrub tonic).

The spirits selection, listing over 90 bottles, features all major spirit families, Asian spirits (including Philippine brands such as Ginebra San Miguel and Emperador), and aperitivo/digestivo liqueurs. As a counterpart to the dessert-centric menu, bitter spirits including several Italian amari will be featured as a suggested pairings to sweet menu items. A limited beer and wine selection with imported bottled beer from the Philippines (San Miguel & Red Horse), Taiwan and Japan and a house red, white, rose and sparkling wine round out the menu.

 
 
 

Availability of the “meryenda” daytime menu (mochi waffles, etc) ends at 3pm, while baked items in the display case (cheesecakes, pies, quiches), will be available throughout the day and night. The “pulutan” evening menu will be available from 6pm onward and features small plates of Philippine bar food (balut, chicharron & spiced vinegar, adobo glazed cashews). Heartier fare such as coffee-rubbed pork ribs and sisig will  roll out as specials in the Fall/Winter. Waste-reduction and sustainability will be a prominent feature of menu design, with daytime prep byproducts used in the evening menu, such as coffee grounds used to make rubs and syrups, and leftover fruits and vegetables from the day menu made into shrubs to be used at night. 

“We have a lot of ideas for drinks and dishes that we’ve been working on, which we will roll out in phases with specials and rotating seasonal menus,” says Quibuyen.

“But early on, we want to establish trust with straightforward, classic cocktails, our familiar desserts and riffs on classics featuring our ingredients. Our opening evening menu includes things that our daytime guests have told us they’d like to see. We’re looking forward to more feedback and evolving the menu to reflect what the neighborhood wants.”

HFC+B has 22 seats (16 dining area, 4 bar, 2 counter). The bar’s theme is casual and cozy, with changes to decor and lighting to give the space a totally different vibe from the daytime. While daytime service runs exclusively on the grab-and-go counterside model, evening service beginning at 6pm will expand to include barside and tableside service alongside ongoing grab-and-go counterside service. 

Hood Famous Cafe + Bar’s new hours will be: Monday 8am-3pm, Tuesday-Thursday 8am-10pm, Friday 8am-midnight, Saturday 10am-midnight, Sunday 10am-7pm. There will be no evening service on Sundays and Mondays.
